Getting Started
Controlling your Foo0d Cost % both annually and monthly has never been easier, you download this EXEL spreadsheet and use it or subscribe to Chef-Ops-Pro Application and there is a dynamic one included in your subscription, all in one place with easy access to history over previous years.
- Open the workbook.
- Select the worksheet for the month you wish to complete (Jan–Dec).
- Enter data only into the yellow input cells.
- All calculations and Year-to-Date figures update automatically.
Setting Up
Before using the workbook:
- Enter the Reporting Year. This field is fully editable, allowing the workbook to be reused each year without modification.
- Enter your Target Food Cost % (for example, 30% should be entered as 0.30).
- Enter the names of your regular Suppliers. These supplier names will automatically appear on each monthly worksheet, making monthly purchase entry quicker and more consistent.
- In January, enter your Opening Stock value. This represents the inventory carried into the beginning of the reporting year.
Completing Each Month
For every month, complete the following sections.
Opening Stock
- January requires you to manually enter your Opening Stock value.
- For every following month, the workbook automatically carries forward the previous month’s Closing Stock as the Opening Stock, creating a continuous monthly stock valuation throughout the year.
Supplier Purchases
Record the value of purchases made from each supplier during the month.
- Supplier names are populated from the Setup section.
- Simply enter the purchase value against each supplier.
- The workbook automatically totals all supplier purchases.
Closing Stock
Enter the value of your physical stocktake at the end of the month.
This value is automatically transferred to the following month’s Opening Stock, maintaining a rolling stock balance throughout the year.
Year-to-Date Summary
The workbook automatically builds a rolling Year-to-Date summary as each month is completed.
This includes:
- Cost of Food Used
- Food Sales
- Food Cost %
- Target Food Cost %
- Variance
- Performance Status
Because the Reporting Year is editable, the workbook can be reused year after year simply by changing the year and entering the new January Opening Stock value.
