A hotel kitchen had been operating at a high level for years. The brigade was experienced. The head chef had worked in well-regarded properties. The food was consistent, the covers were strong, and the operation was, by any practical measure, well-run.

The rebrand had been eighteen months in the making. New identity, new menu, new front-of-house concept. The launch event was six days away.

Then an EHO officer arrived unannounced on a Tuesday morning during breakfast service.


What the Inspector Found

The kitchen itself was clean. The food coming off the pass was properly cooked and correctly temperature-controlled. The head chef knew his HACCP. The walk-in fridges were running cold, the hot hold units were above 63°C, and the brigade had clearly been well-trained.

None of that was the problem.

The problem was the records.

The refrigeration logs had gaps — three days across the previous fortnight where the AM check simply hadn’t been completed. Not because the fridge hadn’t been checked, but because the check had been done verbally during a busy breakfast service and never made it onto the sheet.
